Serve this colorful salsa very simply with tortilla chips or grilled chicken breasts.
Makes about 2 cups
1 large ripe red tomato, diced2 small ripe nectarines, halved, seeded, and diced1/2 small red onion, diced1 1/2 tablespoons thinly sliced fresh basil1 1/2 tablespoons thinly sliced fresh mint1 1/2 tablespoons coarsely chopped fresh cilantro1/2 jalapeño or serrano pepper, seeded and minced1 tablespoon fresh orange juice1 tablespoon fresh lime juiceCoarse salt and freshly ground black pepper
In a medium bowl, toss together the tomato, nectarines, red onion, basil, mint, cilantro, jalapeño, orange juice, and lime juice. Season to taste with salt and pepper. Use within 2 hours.
