4 cups (500 gram) bread flour or 2 cups All-Purpose and 2 cups bread flour 1 1/2 teaspoon salt 2 tablespoons vinegar 1/3 cup tablespoons olive oil About 1 ½ cups water, as needed Cornstarch for rolling the sheets
Mix all dry ingredients, then make a well in the center and pour in the vinegar and olive oil, then add 1 cup water. Mix and knead well (for about 8 minutes) adding more water as needed to make a smooth and elastic dough. Divide into 6, shape each piece into a ball, cover and let rest for at least 10 minutes.
Roll each piece on a surface sprinkling often with cornstarch to make a large, almost transparent thin sheet, and place on a cloth, as you roll the rest of the sheets.
