Cucumber Feta and Mint Salad
A favorite from my book, "From Tapas to Meze", I like to mash this salad to be more like a dip, Either way, it's delicious with some nice warm pita bread!
8 ounces feta cheese
1 tablespoon extra virgin olive oil
2 to 3 tablespoons fresh lemon juice
salt and freshly ground pepper
1 medium English cucumber, peeled, seeded, 1/2" dice
1 small red onion, 1/4" dice
3 tablespoons fresh chopped mint
2 tablespoons fresh chopped parsley
2 tablespoons fresh chopped dill
sprigs of dill and mint
3 wedges of lemon
pita bread (homemade or good quality store bought)
Crumble the feta into a bowl and mash together with olive oil, lemon juice, salt and pepper. Add the cucumbers, onions, mint, parsley, and dill.
Place on a serving plate and garnish with sprigs of dill, mint and wedges of lemon. Serve with warm pita bread.
