Serves 6
2 wedges lime2 tablespoons celery salt Kosher salt and freshly ground black pepper1/2 serrano, seeds removed, halved12 ounces 100% blue agave blanco tequila 3 tablespoons freshly squeezed lime juice2 teaspoons Worcestershire sauce1/2 teaspoon sriracha2 teaspoons balsamic vinegar1 tablespoon freshly grated or prepared horseradish4 cups Fresh Home-Pressed Tomato Juice or commercial organic tomato juice 6 small stalks pickled celery or green onions
To prepare the glasses, rub the rim of each glass with a lime wedge. On a saucer, combine the celery salt, 1 teaspoon salt and 1/4 teaspoon black pepper. Invert the glass and dip the rim of the glass into the celery salt mixture. Set the glasses aside until serving. Reserve the celery salt. In a cocktail shaker, place the serrano chile. Muddle the serrano. Add the tequila and shake well. If the tequila isn’t as spicy as you like it, repeat. Strain the tequila into a large pitcher and add the lime juice, Worcestershire, sriracha, balsamic, horseradish, tomato juice, a large pinch of the reserved celery salt and pepper. To serve, fill the glasses with ice and distribute between the glasses. Stick a stalk of pickled celery in each glass and serve immediately.
