I always have homemade chicken, fish, or meat stock in my freezer. This makes it so easy to arrive home from a long trip and create a simple soup with whatever I have in my refrigerator or pantry. Sometimes my soup is as simple as tiny Italian pasta in chicken broth! A sprinkle of Parmigiano Reggiano and I have the perfect comfort food. Other times it might be a delicious roasted parsnip and celery root soup, blended to a perfect consistency and served with some crunchy croutons on top and simple salad. I think roasting vegetables for a soup creates a depth of flavor that is so delicious!
