Who doesn’t love pizza and pasta? In this weeklong hands-on cooking course, I will teach you my secret tricks to making delicious homemade pizza and pasta just like you taste in Italy. We’ll crank out pasta by hand and machine, and I’ll show you how to make flat pasta like Whole Wheat Fettuccine with Wild Mushooms as well as extruded pasta, like Bucatini alla Amatriciana. My Weir Dough for Pizza is pretty special, and I’ll share with you my latest technique for achieving the perfect crust. I love to create different toppings for pizzas according to the season, and early spring is perfect for my Pizza with Asparagus, Prosciutto and Pickled Onions, as well as Pizza with Wilted Escarole, Pine Nuts and Niçoise Olives. We’ll round our pizza and pasta menus out with some delicious soups, salads, and of course dessert. That's just to whet your appetite!
Each hands-on cooking class will include recipes designed to highlight the typical dishes of a particular region, theme and/or cooking technique. After reviewing the recipes together, students will divide into teams to work on recipes together.
When we are finished cooking each day, we'll sit down in my spacious dining room and enjoy hand-selected wine pairings with each of the dishes we've prepared.
