½ cup homemade or good quality store-bought mayonnaise
1 clove garlic, minced
1 tablespoon lemon juice
1 ½ teaspoons wasabi paste
Salt and freshly ground black pepper
6 excellent quality rolls, halved
6 yellowtail tuna fillets, about 4 ounces each, about 1 ½ pounds
2 tablespoons extra virgin olive oil
Pea shoots, sliced tomatoes and sliced red onions as a garnish (optional)
Place the mayonnaise, garlic, lemon juice and wasabi in a bowl. Mix well and season with salt and pepper. Preheat an outdoor grill. Set the grate 4-inches from the heat source.
Grill the rolls and set aside.
Brush the tuna with olive oil and season with salt and pepper. Grill the tuna until golden on one side, 2 to 3 minutes. Turn the turn and continue to grill on the second side until golden and rare to medium rare, 2 to 3 additional minutes.
Place the tuna on the rolls topping with a big dollop of wasabi mayonnaise. Serve immediately.
