1/4 cup unsalted butter, room temperature
1 cup sugar
1 egg, room temperature
1 1/4 cups all purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
3/4 cup applesauce, preferably homemade
1/2 cup raisins
1/3 cup toasted and chopped walnuts
Preheat an oven to 350ºF.
Cream the butter and sugar. Add the egg and mix until well blended. In a separate bowl, combine the flour, baking soda, salt, cinnamon, nutmeg and allspice. Add the dry ingredients alternately with the applesauce to the creamed butter and sugar. Stir in the raisins and walnuts. Pour the batter into a greased and floured 8 X 8-inch pan.
Bake until a toothpick inserted into the center comes out dry, about 40 minutes.
