I just returned from teaching in Spain and Morocco for a month and honestly, it was probably the most memorable trip of my life.  I unpacked and re-packed and flew to my alma-mater UMASS Amherst to host a few events, then back home again to teach an Italian Wine Country cooking course.  My trips have all been fantastic but it’s fun to be home for a while!

Now that I’m home I’ve been looking at the hundreds of photos I took in Spain and Morocco. This was my first time bringing students to Morocco and it was truly my most extraordinary trip ever. It’s all I can talk about — the vibrant colors, the bustling markets, making couscous by hand, shopping for rugs, our incredible guide Abdul, chef Bahija at our home Jnane Tamsna — the superlatives don’t do it justice!

Needless to say I am reliving the experience as I go through my photos, spices I carried home (and anxious for the delivery of the rest of my Moroccan treasures), and thinking about how to incorporate those taste memories into my Thanksgiving menu. While your Uncle Bob might expect the usual turkey, mashed potatoes, cranberry sauce, and pumpkin pie, maybe you can find a way to add my Moroccan twist into a dish or two for your holiday.

Here is my spin on a Thanksgiving menu with a few Spanish and Moroccan influences for you and your family to enjoy.

Warm Olives with Fennel and Preserved Lemon
Chorizo and Cheese Puffs
Roast Turkey with Ras El Hanout
Pureè of White Winter Vegetables
Moroccan Carrot, Radish, and Orange Salad
Wild Rice Pilaf with Dried Fruits and Pecans
Caramelized Spiced Pumpkin Budino
